Business Edge article - 'Better late?'

Setting up a business involving food production is a completely different ball game again,and presents a unique set of challenges but, at the age of 53, former teacher, Mary Stratton was determined to embark on a new career making vinegars and infused oils.
"The idea had been brewing in the background for some time, and I decided it was now or never," she explains.
"The basic idea was to create amazing flavours using locally grown fruit and herbs, wherever possible, and to bring traditional ideas and recipes back into everyday use, as well as creating combinations and recipes of our own, melding innovation and tradition.
